Quick Note on Aging Guinness Extra Stout

I’ve had a bottle of Guinness Extra Stout in the cellar for four months.  I decided to open it tonight as I had finally run out of regular beer.

Four months isn’t long and I would say that Guinness Extra Stout could easily go to six.  In fact, I found this 4-month beer to be two-thirds of the way between unaged and aged.

Guinness Extra Stout starts out bitter as all hell.  It’s excellent in its own right but it does get better with age.  Aging takes away some of the bitterness and adds a malty sweetness.  It shifts away from insanely strong coffee and more toward a dark chocolate / drinking chocolate.  Think of a good mocha made with Guittard or Scharfen-Berger chocolate and mellow espresso.  I highly recommend leaving your bottle of Guinness Extra Stout in the cellar for six months to age.  You will be handsomely rewarded with wonderful chocolate malty sweetness.
