Amazing night

  • 2 ribeye steaks, rare, with full-blown Maillard reaction crust
  • 6 Crash Hot potatoes, with kosher salt, fresh cracked pepper, and paprika
  • 1 handful flash-boiled haricot verts (but not for me)
  • 1 bottle Tierra Alta 2007 Gran Reserva Cabernet Sauvignon
  • Christa
  • Brick

Really, that’s it, and it’s bloody fantastic all around.  For the record, I’m slightly tipsy.

    There is nothing like the Maillard reaction for taste. It’s why I’m willing to burn all the hairs off my arm cooking over a 500 degree flame. I’m determined to get that crust that looks like it should be inedible, yet is oh so delicious.
